Cold soup for hot weather
We are having lovely weather over here in Germany and it feels like summer. YEAH! After having a soup very similar to this at work yesterday I wanted to make one today as well.
This recipe is super esay, you don’t need many ingredients and you can prep it in advance if you like to.
Recipe for 2-3 as a starter
1 large cucumber
1 tsp olive oil
2 cups ayran (turkish yoghurt drink like buttermilk)
1 cup buttermilk
1 tbl spoon chives
1 tbl spoon parsley
2 prawns per person
Fleur de Sel, white pepper, paprika, cayenne, a dash of sugar
Peal the cucumber and remove the seeds using a teaspoon. Then cut the veggie into smaller pieces.
Put the cucumber into a blender. Add ayran and buttermilk plus all the spices, herbes and olive oil.
Blend the soup for a smooth texture.
You can grill or braise the prawns using some olive oil.
For tonight’s dinner I paired the soup with some bruschetta with two different cheeses and olives. It was a similar recipe to this bruschetta recipe
The gazpacho is a nice low calorie starter and a packed with minerals, lean protein and veggie power!

Thanks for the lovely recipe.The best “white” gazpacho I’ve had was in northeast Spain. This is quite close. We often make it with NF greek yogurt as it’s always in the refrig, but making it with 2% greek yogurt or liquid Kefir was spot on. The LF provided a nicer mouth feel and did not separate when refrigerated. Personally I love fresh dill and often throw it in.
