I have been thinking about trying vegan for a while now. Michael and I do like our meets and dairy but we also eat vegetarian a fair share of the week. I’m struggling with some crazy histamin allergy/ intolerance lately and keep figuring out which foods to avoid and which to tolerate. But I will focus on this subject in a different post in the near future.
Today I’d like to share my vegan donuts with you. I really liked the recipe and the two flavors I came up with. It was easy to do and I enjoyed some comfort food baking.
I also experimented with some different flour this time. Buckwheat flour is on my radar now and it work really well.
Enough said, let’s start baking!
This recipe is for about 15-20 donuts depending on size of course. Mine were on the smaller side. Let’s say two thirds of a regular donut.
2 cups baking flour
1/2 cup buckwheat flour
1/2 cup brown or regular sugar
30 g fresh yeast
0.75 cup of warm rice or soy milk. almond milk works fine as well.
pinch of salt
extra flour for the working surface
oil for frying
Add all ingredients to a baking bowl. Using a table top mixer combine all ingredients and leave the dough in its bowl for about 30 min to rise.
Knead the dough and let it rest for a bout 5- 10 minutes. then roll it out using a rolling pin.
Cut out the donuts and prepare the frying oil in a small pan. Please, be careful using the hot oil! only fry two donuts at a time to avoid the oil from boiling over and hurting you!
Depending on the donuts’ size fry them on each side for a few minutes or until golden brown. then take them out and put them on a paper towl to get rid of some oil.
Let them cool down completely before frosting with your favorite glaze.
I used a coffee and pumpkin spice glaze on my two version. Just take some powdered sugar and add either some pumpkin spice or coffee powder to taste. Then add only a few drops of water to get a sticky glazy. Dip you donuts and decorate with crushed coffee beans or vegan candy corn.
