#CakeFriday week 38/2013 Maple Sirup & Bacon Cupcakes w/ Mascarpone Frosting


I finally had some time to do some baking and I decided to go for some Vanilla Cupcakes with Maple Sirup, crispy Bacon and mascarpone frosting.

I really like the mascarpone frosting. It’s light and fresh and very versatile. It can go sweet and savory.

1/3 cup maple sirup
2 eggs
1/3 cup veggie oil
1.5 flour
0.5 cup ground almonds
1 tsp baking powder

vanilla bean, pinch of salt
6 strips of bacon, cut in half and pan fried => crispy bacon strips


Preheat oven to 400°F.

Whip maple sirup, eggs and oil until fluffy. Add flour, almonds and baking powder. Mix all ingredients. If batter seems too thigh and dry add some water or milk.

Spoon the batter into a muffin pan prepared with paper molds. Then bake little cakes for about 18-21 minutes at 320°F.
When finished let them cool completely before frosting.

For the frosting

2.5 cups mascarpone cream cheese
0.5 – 0.75 cup powdered sugar

Add mascarpone into a mixing bowl. Then sift powdered sugar and add it to the cream cheese. Mix ingredients until combined and fluffy.
Decorate cupcakes with frosting and bacon.
