Mango-Red Currant Salsa

Today I have a delicious salsa recipe for you! It’s fresh, healthy and easy to prepare. I made it as a starter for some friends last weekend and they loved to dip and snack with some baked chips. Who says it always has to be a tomato salsa? Michael is pretty happy about this recipe as he doesn’t enjoy tomatoes at all :-)

1 cup red currants
1 cup diced mango
1/2 cup diced red onions
2 tbl spoons fresh parsley, chopped
0.5 – 1 tbl spoon olive oil
1 tbl spoon white vinegar

salt, white pepper, cayenne pepper, lemon or lime juice to taste

Mix all ingredents in a small mixing bowl and use spices to taste. Yummyly delicious! This salsa is also great with fish, steak and poultry. Let me know how you liked it!
