Homemade Mediterranean Flatbread with Olives & easy yeast pizza dough

I really love baking on my BBQ lately and Michael and I are seeing the boys for dinner tonite. It’s time to fire up the BBQ at their house this time. Haven’t seen them for a while as they have been on vacation for a few weeks.
Well, I have prepared an easy to make yeast-pizza dough this morning that I’d like to share with you.

This recipe makes three medium sized flat breads or pizzas:

2 cups of all purpose flour
2 teaspoons sugar
0.5 teaspoon salt
20g fresh yeast
0.75 cup luke warm water

Dissolve the yeast in the warm water. And place all ingredients in a mixing bowl. I used my kitchenaid to do all the work now for me. I let it knead the dough for 5 minutes. Then let it rest for 10 minutes and gave it a final knead afterwards for a couple of minutes.

Leave the dough in the mixing bowl and cover it with ceran wrap. Put it in the fridge where it will rise for several hours. I prepared the dough at 6am this morning and started working it at 5pm this afternoon. You can prepare this dough well in advance and let it rise over night.

For the flat breads I devided the dough in thirds and gave all of them a good knead on a floured surface. Then used the rolling pin to roll them out. I wanted to go for a rustic look but don’t hesitate to make perfect rounds :-)

I sprinkled the breads with mediterranean spices like rosemary, paprika, garlic….added some olives and olive oil. Voilá!

I baked the breads on my pizza stone on the BBQ for about 6-7 minutes each. I think they look just wonderful!
