today I have a recipe for a healthy protein snack/ side dish for you that is easily made with a few ingredients that many of you have at home anyways.
You will need the following per person
1 cup of your fave cooked veggies
1/3-1/2 cup low fat milk
1 egg (or the equal amount of egg beaters)
salt, pepper, nutmeg, your fave spices
If you’d like o kick it up a notch you can add some cheese to the dish, too. I left the cheese out this time though.
Preheat the oven to 320°F. Mix the eggs and milk plus spices in a small bowl. Put the pre-cooked veggies in individual cocottes or one larger pan and pour the egg mix over the veg.
Bake the dish for about 30 minutes or until th egg is cooked through. you can also spinkle some cheese over the veggies 10 minutes before the cooking time ends.
Serve a some green salad or as a side dish for an extra protein kick. I served it as a side with some roastbeef yesterday. Michael enjoyed it and asked for seconds
